Spiced Up Chicken Salad Recipe



2 chicken breasts
Bacon – crumbled
⅓ cup green capsicum – diced
2 jalapeños – diced
1 green onion – diced
¼ cup ranch dressing
⅓ cup mayo
Cajun seasoning, salt, and pepper to taste


  1. Preheat smoker to 110°C.
  2. Season chicken breasts with Cajun seasoning.
  3. Smoke chicken for about a hour and a half or until the internal temperature reaches 75°C.
  4. Chop or shred chicken.
  5. In a bowl, combine the chicken, bacon, peppers, jalapeños and onion.
  6. Add ranch dressing and mayo to the bowl, mix together until combined.
  7. Cover bowl with plastic wrap and refrigerate.
  8. Serve on bread, croissants, or with crackers and enjoy!
