Smoked Cherry Chicken Recipe



1 cup cherry preserves
1 Tbsp butter or margarine, melted
½ tsp grated lemon zest
2 Tbsp fresh lemon juice
1½ tsp ground cinnamon
Pinch salt
Pinch ground cloves
900 to 1.1 kg chicken quarters


  1. Preheat smoker to 115°C.
  2. In a medium bowl, combine cherry preserves, butter, lemon zest, lemon juice, cinnamon, salt and ground cloves.
  3. Brush marinade over chicken, reserving some marinade for basting during the cooking process.
  4. Place chicken in smoker and smoke for 1½ hours, basting halfway through, or until internal temperature reaches 75°C.
