Personal Jalapeño Fatty Recipe



450 g ground beef
2 packs of bacon
Cream cheese
Cheddar cheese
Salt, pepper, onion powder, and garlic powder to taste
Suggested wood chips: hickory
Apple juice for the water bowl


  1. Preheat smoker to 110°C.
  2. Blend 450 g of ground beef with salt, pepper, onion powder and garlic powder.
  3. Make the individual bacon weaves (watch Jalapeño Fatty on the ThermoTemp Smoker video).
  4. Quarter the ground beef to make four individual fatties.
  5. Flatten each quarter and layer cream cheese, cheddar cheese and Jalapeños.
  6. Roll the stuffed ground beef and seal completely.
  7. Wrap each ground beef mixture with the bacon weave and place in the smoker.
  8. Smoke for one hour and 15 minutes.
  9. Slice and enjoy!
