Smoked Baby Back Ribs Recipe

Ingredients

900g to 1.8 kgs Pork Baby Back Ribs
½ Tbsp salt
¼ cup brown sugar
2½ Tbsp chilli powder
1½ Tbsp ground cumin
2 tsp cayenne pepper
2 tsp black pepper (freshly ground)
2 tsp garlic powder
2 tsp onion powder
Suggested wood for smoking: Hickory chips

Preparation

  1. Preheat smoker to 115°C.
  2. Mix ingredients to create a rub seasoning. Apply dry rub to the ribs and let them sit at room temperature for 30 minutes.
  3. Place ribs in smoker and cook for 3 hours. After 3 hours, remove the ribs and wrap in heavy-duty aluminium foil (Optional: You can baste with your favourite BBQ sauce at this time).
  4. Return to smoker and cook for an additional 1- 1½ hours, or until internal temperature reaches 70°C.
