Smoked Tuna Recipe

Ingredients

4 tuna steaks (2.5 cm thick)
1 ⅛ cup sugar
⅜ cup salt
1 tsp pepper
¼ tsp garlic (granulated)
¼ tsp prague powder #1
1 cup honey
3.8 litres water
Suggested wood for smoking: Hickory or apple chips

Preparation

  1. Mix above ingredients until dissolved in water.
  2. Place in preheated smoker at 60°C and cook for about 7 hours using water mixture in water pan.
